Happy Cinco de Mayo guys! I hope you’re all sipping margarita with a big bowl of chips and guac next to you. I plan on doing that a bit later today. But, for now, you’re really gonna loveeeeeee this recipe I have to share.
So, I’m HUGE on good eating. By good eating I mean eating whats right for your body but also eating good food. We shouldn’t have to sacrifice our taste buds for our health, am I right?
I have this super easy salad that I LOVE to make all the time. It’s perfect for really anything. A hot date, a sit-on-the-couch-in-your-sweats kind of day, or for the fam!
When I say super easy, I mean SUPER easy. Like for reals. All you have to do is empty the contents into a bowl, mix, and serve.
It’s got kale, brussels sprouts, celery, cranberries, pumpkin seeds, and poppyseed dressing.
And it’s gluten free!
I first started buying it at Costco, but I go to Trader Joe’s way more often now. So that’s where I bought this one. But they’re basically the same thing.
Like I said, all You have to do is empty the contents into a bowl, mix and serve. I usually will break this up in to about three servings. Sometimes two, heck, sometimes only one. Lol.
And obviously you can modify it as you see fit. Sometimes I want less dressing, and sometimes I want less cranberries. In which case I just use less.
That’s what I love about not sticking to set recipes. It’s just completely up to you and your own preferences.

It’s super fun because you can literally eat this salad right out of the bag if you’re running around. Like I said in this post, it’s really important that you’re fueling your body correctly.
