Anyway… I’ve got another recipe for you!!!
And it’s BOMB.
I’m super in to trying to convince my friends that vegan food is just the bees knees. (because it is)
And therefore I’m always trying to come up with new recipes that replicate everyone’s guilty pleasures in life.
FOR INSTANCE: Chili Cheese Fries.
It’s SUCH a simple recipe it’s almost ridiculous.
HERE’S WHAT YOU NEED
Butternut Squash Zig Zags (From Trader Joe’s)
Cuban Style Black Beans (ALSO Trader Joe’s)
Vegan Cheese Sauce***
***So as far as the cheese sauce goes you can go about it in a few different ways. There are plenty of vegan cheese recipes out there, there are brands of vegan cheese that you could melt down. What I did was use this recipe by Oatmeal with a Fork.
I know you probably think this is an ad for TJ’s by now. It’s not. They’re just totally on top of their game.
Alright, get ready for the easiest recipe of your life.
- Saute butternut squash and place in a dish
- Saute beans and cover squash with satueed beans
- Cover with cheese sauce
I brought these over to my friend Brandon’s house (who is a meat eater) and he devoured them. Well we both ate it, but I let him have most of it for fear of losing a finger… :P
These honestly taste better than chili cheese fries in my opinion. And I like knowing that I’m eating my veggies too.
